"Ukemi" is a cutting board made of Japanese cypress, which is specially designed for cutting using sharp Japanese knives (such as our "Banshu Kitchen Knife).
It stays clean and flat for a long time, provided you wipe it with a dry towel and let it dry in a well-ventilated place after washing it.
When it is worn out, the old surface can be planed to become just like a new one.
Made from Hinoki wood (Japanese cypress).
